Paleo Muffins


I won’t go into what these muffins do or don’t contain but what I can say is that they are really good and couldn’t be easier to make.If you want to heat them up after storing them in the freezer and add some yogurt or ice cream – they are almost like a nice Christmas pudding. I know it’s too early to mention that word, but it’s coming and fast.

Note that they don’t rise much so you should put the muffin mixture in the muffin papers – up to the point you’d like them to end up in size.

Minutes to Cook: 25

Number of Servings: 12


  • 2 cups Almond Flour
  • 2 tsp Baking Soda
  • 1 Tb Cinnamon
  • 1 Tb Vanilla
  • 1 cup Raisins
  • 3 medium Bananas
  • 1/4 cup Coconut Oil
  • 3/4 cup Walnuts



Mix together and pour into muffin baking pan. Cook at 325 for 25 minutes. Let stand and serve. Makes 12 muffins.
